A classic campfire treat with a touch of Disney magic.

Ingredients
Marshmallow Layer
1 1/3 cupswater(divided)
4packetsunflavored gelatin (powdered gelatin, not sheets)
3 cupssugar
1 1/2cupslight corn syrup
1/4tspsalt
2 tsp vanilla
Fudge Layer
4tbspunsalted butter
2cupsmilk chocolate chips
1cansweetened condensed milk(14 oz)
1/4tspsalt
1/2tspsugar
Additional Ingredients
12graham cracker squares(6 sheets broken in half)
2 cupssemi-sweet chocolate chips
1/2cupwhite chocolate chips(for decoration)
yellow gel food coloring (for decoration)
Instructions
Marshmallow Instructions
In a large mixing bowl, add 2/3 cup water and sprinkle four packets of gelatine over the top. Gently swirl to combine, but it does now have to be completely mixed in. Set aside.
In a saucepan over medium heat, combine sugar, corn syrup, salt, and remaining 2/3 cup water. As the mixture heats, stir frequently to dissolve sugar. Once the mixture reaches a boil, allow it to continue to boil without stirring until it reaches “soft ball” stage. (Using a spoon, drop a tiny bit of the sugar mixture in a cup of water- if it stays in a ball like shape without spreading, it has reached “soft ball” stage.)
Once the sugar has reached “soft ball” stage, grab a hand mixer. Carefully pour the boiling sugar mixture into the bowl of gelatine and mix using the hand mixers lowest setting for 2 minutes. Raise the speed to medium and mix for another 2 minutes. Finally, up the speed to the highest setting and mix for another 3-4 minutes, until mixture is stiff and sticky.
Add vanilla and mix until well incorporated.
Line a medium sized cookie sheet (just larger than a 9x13 pan) with parchment paper that has been greased on both sides.
Pour marshmallow mixture onto cookie sheet and use wet fingers to smooth out the marshmallows until they are even.
Set aside until set, about 3-4 hours.
Fudge Instructions
Using a double boiler, melt the butter. Then add milk chocolate chips, sweetened condensed milk, salt, and sugar. Stir until completely melted and well combined.
Line a 9x13 pan with greased parchment paper.
Pour fudge mixture into pan and place in the fridge to chill and set for at least 4 hours.
To Assemble
Take 6 graham cracker sheets and break them in half so you have 12 equal graham cracker squares.
Unmold the fudge and place on a sheet of parchment paper. Using the graham cracker squares as a template, cut out 12 pieces of fudge. Optional: Using the excess fudge, create another layer of fudge for each s’more so they have double the fudge. I did double layer mine.
Next, on a piece of greased parchment paper, dump out the marshmallows. Again, using the graham crackers as a template, cut out 12 squares of marshmallows. They will be sticky so get a glass of warm water to dip your knife in to prevent sticking and make cutting easier.
Then, on a cookie sheet lined with parchment paper, build your s’mores. Lay down your graham cracker squares, add the fudge, then top with marshmallows. Set aside.
Lastly, melt down your semi-sweet chocolate chips. You can melt them in the microwave or in a pan on the stove. If you want to temper your chocolate you can but it isn’t necessary.
Spoon the melted chocolate onto each s’more and using a knife, make sure the top and each side is completely covered. Place in the fridge and allow the chocolate to set, about 3-5 hours.
Optional: Melt white chocolate in the microwave and add yellow gel food coloring. Stir until the color is even. With a small round piping tip, pipe a Mickey onto each s’more and put back in to the fridge to set.
Enjoy your delicious Disney treat at home while imagining you are taking in the sights and sounds of the parks.
Notes
•For best results, store the s’mores in the fridge to keep them set.•If you want to half the recipe, use smaller loaf pans for your marshmallows and fudge so they are thick enough.•If you want a cleaner Mickey decoration on top, you can use the extra marshmallows to make a quick marshmallow fondant that you can cut Mickeys out of.
