Copycat Mickey S’mores


Who doesn’t love the classic pairing of graham crackers, marshmallows, and chocolate? S’mores are such a staple for perfect summer nights around the fire, camping, or even at barbecues. But you haven’t had a s’more like Disney does them.


Let’s be honest, everything Disney makes is delicious but imagine a s’more made with rich fudge, gooey homemade marshmallow, and then dip the entire thing in chocolate. They are so ridiculously good and have claimed their spot on my Top 10 Disney Treats list!

You can find these in various places around the parks like Pooh’s Corner and the Candy Palace in Disneyland, Trolley Treats in California Adventure and Marcelines’s Confectionary in Downtown Disney.

But now, you don’t have to visit the parks to have this delicious, decadent treat because I’m bringing the Mickey s’more recipe to you! They do take a little time and patience, but man are they worth it! So let’s get started!

TO MAKE THE MARSHMALLOWS

Before we get started on the marshmallows, here’s what you’ll need:

» Sugar

» Light corn syrup

» Unflavored gelatin (in packets)

» Vanilla

» Salt

» 1 1/3 cup water


First, put 2/3 cup water in a large mixing bowl and sprinkle 4 packets of unflavored gelatin over the top. Lightly swirl the bowl to get it roughly combined. Set aside.


Next, combine the remaining 2/3 cup water, sugar, corn syrup, and salt in a sauce pan. Turn on high heat and stir often to dissolve the sugar.


Once the mixture reaches a boil, let it boil without touching it until it reaches “soft ball” stage. To test it, get a cup of water and drop a tiny bit of the mixture into the water. If it stays in a ball like shape without spreading then it’s ready.


Once the mixture has reached “soft ball” stage, carefully pour it into the bowl with the gelatin. Mix on the lowest setting for two minutes. Then, turn the speed up to medium and mix for another two minutes.


Next, crank up the mixer to the highest speed and mix for an additional 3-4 minutes or until its stiff and sticky like the picture below.


Add the vanilla and mix for another 30 seconds to incorporate.


Next, line a cookie sheet with greased parchment paper. I used a 9×13 pan but I would recommend using a cookie sheet which is what I will do from now on when I make this. Pour the marshmallow mixture onto the greased parchment paper and smooth the top with your fingers. (Get your hands wet to keep them from sticking.)


Set the marshmallows aside to set on the counter for at least 3 hours.

TO MAKE THE FUDGE


All you’ll need for the delicious fudge layer is:

» One bag milk chocolate chips

» 1 can sweetened condensed milk

» Butter

» Salt


In a double boiler, melt the butter over medium heat. Then add the chocolate chips, sweetened condensed milk, salt, and sugar. If you don’t have a double boiler, put a smaller pan or metal bowl over a pan with about 1/2 inch of water in it. You just don’t want to cook it on direct heat.


Consistently stir the fudge until it is completely melted.


Line a small cookie sheet or 9×13 pan with parchment paper and pour the fudge onto the pan.


Evenly spread the mixture into the pan and put in the fridge to chill and set. This should take about 4-5 hours.


TO ASSEMBLE THE S’MORES

Take 6 sheets of graham crackers and break them in half so you have 12 squares. These will be your template to cut the layers and the base to build your s’mores.

Take your fudge out of the fridge and place your graham crackers on top to use as a template. Take a knife and cut around the graham crackers.


Once you have your 12 pieces of fudge cut out there will be extra. I took those extra pieces and made an extra layer for each graham cracker so my fudge was twice as thick. This is a judgement call. Mine was thinner than I wanted so I doubled up but if your fudge is thick enough, you can just so one. Place the fudge on each graham cracker.


Next, dump your marshmallows onto a greased piece of parchment paper. Place your graham cracker fudge squares (fudge side down) onto the marshmallows.


Just like with the fudge, this is your template to cut your squares. Using a knife, cut your marshmallows. (They will be very sticky and hard to cut- get a glass of warm water to dip your knife into after each cut to prevent it from sticking so much.)


Once those are cut down, place each s’more onto a parchment lined cookie sheet.


Next, you need to melt some semi sweet chocolate to coat them. I used an entire bag (about 2 cups) in a sauce pan. If you want, you can temper the chocolate but let’s be honest, ain’t nobody got time for that! It will work just fine if you don’t temper it.


Once the chocolate is melted, spoon a healthy amount of chocolate on top of each s’more. Then, using a knife smooth down the top and make sure to coat each side.


Once they’re completely coated, put them in the fridge to set. The longer they are in there, the better. I would say at least 3 hours so everything can set up and solidify.


Last step is to add a cute little Mickey to the top. This is totally optional but let’s be honest, what Disney treat is complete without Mickey?? I just melted some white chocolate in the microwave, added some yellow gel food coloring, and put it into a piping bag with a small round tip and piped a chocolate Mickey onto each s’more.


And voila! A beautiful, delicious Mickey s’more right in your own home! Just close your eyes and imagine your sitting on a park bench on Main Street USA and enjoy.

Disneyland’s Mickey S’mores

A classic campfire treat with a touch of Disney magic.

Ingredients

Marshmallow Layer

  • 1 1/3 cups water (divided)
  • 4 packets unflavored gelatin (powdered gelatin, not sheets)
  • 3 cups sugar
  • 1 1/2 cups light corn syrup
  • 1/4 tsp salt
  • 2 tsp vanilla

Fudge Layer

  • 4 tbsp unsalted butter
  • 2 cups milk chocolate chips
  • 1 can sweetened condensed milk (14 oz)
  • 1/4 tsp salt
  • 1/2 tsp sugar

Additional Ingredients

  • 12 graham cracker squares (6 sheets broken in half)
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips (for decoration)
  • yellow gel food coloring (for decoration)

Instructions

Marshmallow Instructions

  • In a large mixing bowl, add 2/3 cup water and sprinkle four packets of gelatine over the top. Gently swirl to combine, but it does now have to be completely mixed in. Set aside.
  • In a saucepan over medium heat, combine sugar, corn syrup, salt, and remaining 2/3 cup water. As the mixture heats, stir frequently to dissolve sugar. Once the mixture reaches a boil, allow it to continue to boil without stirring until it reaches “soft ball” stage. (Using a spoon, drop a tiny bit of the sugar mixture in a cup of water- if it stays in a ball like shape without spreading, it has reached “soft ball” stage.)
  • Once the sugar has reached “soft ball” stage, grab a hand mixer. Carefully pour the boiling sugar mixture into the bowl of gelatine and mix using the hand mixers lowest setting for 2 minutes. Raise the speed to medium and mix for another 2 minutes. Finally, up the speed to the highest setting and mix for another 3-4 minutes, until mixture is stiff and sticky.
  • Add vanilla and mix until well incorporated.
  • Line a medium sized cookie sheet (just larger than a 9×13 pan) with parchment paper that has been greased on both sides.
  • Pour marshmallow mixture onto cookie sheet and use wet fingers to smooth out the marshmallows until they are even.
  • Set aside until set, about 3-4 hours.

Fudge Instructions

  • Using a double boiler, melt the butter. Then add milk chocolate chips, sweetened condensed milk, salt, and sugar. Stir until completely melted and well combined.
  • Line a 9×13 pan with greased parchment paper.
  • Pour fudge mixture into pan and place in the fridge to chill and set for at least 4 hours.

To Assemble

  • Take 6 graham cracker sheets and break them in half so you have 12 equal graham cracker squares.
  • Unmold the fudge and place on a sheet of parchment paper. Using the graham cracker squares as a template, cut out 12 pieces of fudge. Optional: Using the excess fudge, create another layer of fudge for each s’more so they have double the fudge. I did double layer mine.
  • Next, on a piece of greased parchment paper, dump out the marshmallows. Again, using the graham crackers as a template, cut out 12 squares of marshmallows. They will be sticky so get a glass of warm water to dip your knife in to prevent sticking and make cutting easier.
  • Then, on a cookie sheet lined with parchment paper, build your s’mores. Lay down your graham cracker squares, add the fudge, then top with marshmallows. Set aside.
  • Lastly, melt down your semi-sweet chocolate chips. You can melt them in the microwave or in a pan on the stove. If you want to temper your chocolate you can but it isn’t necessary.
  • Spoon the melted chocolate onto each s’more and using a knife, make sure the top and each side is completely covered. Place in the fridge and allow the chocolate to set, about 3-5 hours.
  • Optional: Melt white chocolate in the microwave and add yellow gel food coloring. Stir until the color is even. With a small round piping tip, pipe a Mickey onto each s’more and put back in to the fridge to set.
  • Enjoy your delicious Disney treat at home while imagining you are taking in the sights and sounds of the parks.

Notes

•For best results, store the s’mores in the fridge to keep them set.
•If you want to half the recipe, use smaller loaf pans for your marshmallows and fudge so they are thick enough.
•If you want a cleaner Mickey decoration on top, you can use the extra marshmallows to make a quick marshmallow fondant that you can cut Mickeys out of.

Let’s be honest, Disneyland can get really busy Let’s be honest, Disneyland can get really busy and sometimes there’s just too many people, so here are some of my favorite spots to escape the crowds at Disneyland:

- Tom Sawyer Island
- Seating area behind Thunder Mountain
- Seating Area next to Ship to Shore Marketplace
- Pathway behind Harbour Galley
- Back corner of Bayou Country
- Back corner of Toontown
- Seating area by Troubadour Tavern and the Fantasyland Theatre
- Benches at the exit of Space Mountain
- Seating area behind Edelweiss Snacks
- Stairs across from “it’s a small world”

Other locations that can be hit or miss:
- Fantasy fair area (at certain times of the day)
- Tables next to the Casey Jr Circus train (not during meal times)
- Snow White’s Wishing Well (can be hit and miss with character meet and greets)
- Mark Twain River Boat- if there’s not a ton of people on your sailing
- Second floor of Golden Horseshoe- avoid mealtimes and it’s usually great, you don’t have to eat to go in there
- Sleeping Beauty Castle Walkthrough- you’ll have to downstairs and if there’s several groups doing it at the same time, you can feel a little cramped in the hall ways
- Main Street Cinema is usually a great spot, but has become a little more popular with the new show for the 70th
- Main Street Opera House- this is a great spot if you aren’t in there right before a show is about to start, as people will sit around and wait to be let in
- Adventureland Treehouse- usually not too busy but not a lot of space if it is
- Tiki Room outdoor seating- if there’s several groups isn’t a show soon, this spot can sometimes be pretty empty

Things in the world feel heavy and scary. Make sure you’re taking care of yourself and your mental health.
24 years since that awful day. I still remember ho 24 years since that awful day. I still remember how I felt that day, even as a young child, and that will always stick with me. The fear. The grief. The uncertainty. The devastation.

But another thing I will always remember is the good that still existed, even in such a dark time in the weeks and months that followed afterwards. I remember the helpers. The good deed doers. The ones who reached out to those who needed it. Who risked their lives, who put aside their differences and loved each other. I remember the unity that followed that day. And it was beautiful. Was it perfect? No of course not. We’re human, and there will always be error. But it was still amazing to see people being good to each other even after such a horrific event. 

I so desperately want to see just a glimpse of that unity again. Not just for our country, but the entire world, to try to work together to bring about something positive in the face of such horrible events that seem to constantly be happening. 

Our world has descended into unnecessary violence, hatred, and intolerance. Is this what we want for us? Is this what we want for our children? Is this a future we are okay with? 

Tragedy has a weird way of putting things into perspective. Helping us realize what’s important. Helping us see what changes need to be made. And it feels like recently, everywhere you look is one tragedy after another. When are we going to realize that during times like this, we have to come together instead of becoming more divided?

It’s down to ALL of us to be better and make our country and our world a better place. Even if we can’t make huge changes on our own, we can each do our part in our own lives to be more tolerant and understanding, loving and accepting, and doing what we can to bring about change. Through it all, be a good deed doer. Be a helper. Be willing to hear and learn from others, even if you disagree. Be willing to voice your opinion and strive for change. Be loving. Just be a good person. 

If we can make it through that horrible event 24 years ago, we can surely find a way to make it through the dark times we’re walking through now. But it takes all of us. Together.

Remember, during Halloween Time you can experience a Halloween overlay on Guardians of the Galaxy! Monsters After Dark is available to ride every day starting at 3 pm until park close! The normal Mission Breakout is also available daily from park open until 2 pm if you don’t want to do the Halloween version.

I get this question in some way or another pretty I get this question in some way or another pretty frequently. As my handle implies, I am an introverted person, and yes the crowds at Disneyland make me very anxious at times, though not for that reason.

My anxiety in crowds at Disneyland began almost 10 years ago when I experienced a very sudden and severe onset of OCD a week before I left for a Disneyland trip. And unfortunately, my OCD is germ based and involves a severe phobia of vomiting. Seeing it, hearing it, experiencing it myself, doesn’t matter. Even if someone looks sick will trigger it.

And that first trip was so hard. My hands were raw from how much I had been washing them leading up to that trip, hoping I wouldn’t get sick and miss my trip. I was lathering my hands in all sorts of creams and wore gloves to sleep to try to offset the only physical manifestation of my inner struggle. But every photo from that trip bears that reminder of how bad I was doing. You can see in these photos I frequently have my hands tucked up near my body or clasping them together to avoid touching anything I didn’t have to, trying to make myself as small as possible to avoid getting sick. I was analyzing everything around me constantly, every person near me, avoiding every garbage can, not touching any surfaces, making extremely frequent visits to the bathroom to wash my hands to avoid catching anything. It sucked. 

Fast forward almost a decade and I’m happy to say I’ve made a lot of progress, but those same fears and behaviors have stuck around. I’m still super anxious at Disneyland, even though I love it so much, I cannot turn off that part of my brain. But luckily, being an introvert has paid off and helped me naturally find some ways to alleviate that anxiety and have a more enjoyable time in the parks. And going forward, I’d love to share what works for me in the hopes that if you need help too, it can benefit you as well.

Wanting to plan a visit to Disneyland sometime bet Wanting to plan a visit to Disneyland sometime between now and the end of 2026? You’re going to want to book NOW. Here’s why:

1️⃣ Prices are going to go up. Every year, usually in October, Disney raises their ticket prices. Booking now locks in the lower ticket price so even if you aren’t visiting until next year, you’ll still be paying the cheaper 2025 ticket prices instead of the higher 2026 prices that are coming.
2️⃣ Most availability for hotels. The sooner you book, the easier it will be for you to get into the hotel and room option that you want without them being booked out.
3️⃣ If you are wanting to stay at a Disney Resort Hotel, you will want to visit by January 4, 2026 so you can take advantage of early entry. Starting January 5, 2026 Disney has announced that they will no longer offer the perk of early entry, even if you are staying at a Disney hotel. If you’re wanting that perk, book for 2025 before it’s gone.
4️⃣ Right now, my travel partners @getawaytoday are offering Adults at Kids prices tickets on all 3 day or longer tickets, which is also based on the current 2025 prices, so you’ll be saving as much money as possible on your tickets!

Yep you heard that right, early entry is soon to b Yep you heard that right, early entry is soon to be a thing of the past at the Disneyland Resort, starting January 5, 2026 early entry will no longer be offered for guests staying at a Disneyland resort hotel. Instead, each guest will receive one lightning lane that can be used on any lightning lane multipass attraction. 

Based on the wording on the Disneyland website, that sounds like ONE lightning lane for your entire stay and no I don’t think that will be valid for Rise of the Resistance or Radiator Springs Racers since they are not included in Lightning lane multipass.

Any Disneyland resort hotel stays between now and January 4, 2026 will still be able to take advantage of early entry on these schedule dates:

Disneyland Park: Tuesday, Thursday and Saturday
Disney California Adventure Park: Monday, Wednesday, Friday and Sunday

If you’re visiting the Disneyland Resort between If you’re visiting the Disneyland Resort between now and Halloween and are not attending Oogie Boogie Bash, you need to know these dates! 

If you are planning to visit California Adventure on any of these dates, the park will close at 6 pm to all non ticketed guests, so if you have single park per day tickets, I would suggest you change your park reservations so you are in DCA on non event nights and do Disneyland on any dates that have Oogie Boogie Bash. If you have park hopper tickets, I would recommend starting your day in DCA and then around 3 pm when the mix in hours start for those with Oogie Boogie Bash tickets, park hop over to Disneyland and finish out your day there.

With Lightning Lane Multipass, you can only ride e With Lightning Lane Multipass, you can only ride each attraction one time, BUT during Halloween Time there is an exception to that rule! 

From now until October 31, if you purchase Lightning lane multipass you can get a Lightning lane for the normal Guardians of the Galaxy: Mission Breakout and then also get one for Guardians of the Galaxy: Monsters After Dark! 

To do it, just make sure you get a return time for Guardians of the Galaxy: Mission Breakfout that is BEFORE 2 pm. Then the attraction will close for an hour and reopen at 3 pm, then you want to get a return time ant time after 3 pm for Guardians of the Galaxy: Monsters After Dark.

On normal days, this attraction is typically open until 10 pm, but on Oogie Boogie Bash nights it will only be available until 6pm, so if you’re in DCA on an OBB event night, you will only have from 3-6 pm to get on to Monsters After Dark.
You heard that right! Guardians of the Galaxy: Mis You heard that right! Guardians of the Galaxy: Mission Breakout will now switch over to Guardians of the Galaxy: Monsters after Dark starting TODAY in California Adventure! 

Every day, Guardians will open as the original version and then close at 2 pm, then reopen at 3 pm as the Monsters After Dark overlay. This overlay will run for the duration of Halloween Time, so make sure you go ride it while you can!

We had a solid chunk of the day where we couldn’t use our lightning lanes due to plans we already had, so we could have easily booked more return times on a normal day without those plans and reservations. This was also a day in the park that was not super busy so we were able to get on a lot more things compared to the day before when it was busy and we got more use out of lightning lane multipass.
