Num num cookies! There are few things better than the perfect chocolate chip cookie. The golden brown outside, soft warm inside with the melty chocolate chips. But even better than that is a Disney chocolate chip cookie and there’s none better than Jack-Jack Cookie Num Nums that you can find on Pixar Pier!
Disney Parks releases their recipe for this delicious treat and let me just say… they are so good! The game changer about this recipe is cooking them in cupcake liners so they don’t spread and go flat and you use browned butter. There is NOTHING better than brown butter. It takes these cookies to a whole new level! Are you ready to up your chocolate chip cookie game? Let’s get started!
What You’ll Need
Before we get started, make sure to gather your ingredients. You’ll need:
»Butter
»Brown sugar
» Turbinado sugar
»Flour
»Salt
»Baking soda
»Vanilla
»Eggs
»Chocolate chips
»Cupcake liners
How to make the cookies
The first thing you have to do is brown the butter. Put two sticks of salted butter in a small saucepan and melt it down. You can use unsalted butter, but the salted butter gives the cookies a richer flavor.
Once the butter is melted, you want to bring it to a low boil and let it cook for a few minutes. Using a spatula, stir it occasionally to keep it from burning to the bottom. The butter will start to darken and foam, that’s normal. You want to stop when the butter has small dark particles on the bottom but before it burns, when it’s a nice golden brown color. Once the butter is browned, transfer it to a bowl to cool and pop it in the fridge to cool completely until it is solidified.
Once the butter has solidified, mix the brown sugar, turbinado sugar, salt, and butter in a mixing bowl until it’s light and fluffy. Turbinado sugar is going to add a slight caramel flavor to your cookies so I highly recommend using it if you can, but if you can’t find it you can substitute it for normal sugar, just see the recipe below for how to tweak the measurements.
Next, add the egg, egg yolk, and vanilla. I prefer to use mexican vanilla but you could use normal vanilla if you don’t have any. Mix that until it is completely incorporated.
Now, you’ll add the flour and baking soda. It will work better if you’re doing this with a mixer but I did mine with a spatula and it was fine. I just used my hands to mix in the last little bits of flour.
Here’s what your dough should look like. It is a fairly dry dough compared to other doughs I’ve used but that’s normal.
Lastly, add your chocolate chips or chunks. You can use milk chocolate, semi sweet, or whatever you like. I used milk chocolate chips but I know at Pixar Pier they use chunks of chocolate. Really whatever you prefer will be just fine. My personal preference is Ghirardelli milk chocolate chips, but any milk chocolate chip will work.
Once your dough is ready, place your cupcake liners on a cookie sheet. You will need about 14-16 normal sized cupcake liners. I underestimated how many it would fill at first. If you are using larger 3”-4” inch liners, you will use less liners.
Fill each cupcake liner with 2-3 tablespoons of dough. I started with two to see how much I really needed.
Now smash the dough down until it’s flat. I had plenty of room left so I ended up adding about one more tablespoon of dough to each liner. The last thing to do is top each cookie with more chocolate chips/chunks and lightly push them into the dough. Make sure to add some hidden chocolate chip Mickey’s!
These need to bake at 350° for 14-15 minutes until the edges and tops are golden brown but the inside is still soft. If you’re using the larger cupcake liners, it will take roughly 16-18 minutes.
Let the cookies cool for a few minutes before devouring them. You could also top with a scoop of ice cream for a more indulgent treat. And how cute is that hidden Mickey baked into them??
