Mickey and Minnie, Donald and Daisy, Cinderella and Prince Charming, Beauty and the Beast… Disney is full of perfect pairs and one of the best pairs of them all? Mint juleps and beignets!
There is nothing better than stopping by the Mint Julep Bar for a nice and refreshing mint julep and a delicious warm bag of beignets for a quick snack or even breakfast!
Both of these fantastic treats have claimed a spot on my list of top 10 Disney treats and for good reason. They are both so good and I had to recreate them at home! So let’s take a trip to New Orleans Square together for a yummy treat in your own home!
WHAT YOU’LL NEED FOR THE MICKEY-SHAPED BEIGNETS
Disney Parks released their beignet recipe which is super easy to follow and taste just like the parks! Most of the ingredients you probably already have, so here’s what you’ll need:
» Packet of instant yeast
» Sugar
» Shortening
» Salt
» Heavy cream
» An egg
» Flour
» Water
» Vegetable oil
» Powdered sugar
TO MAKE THE BEIGNETS
One thing about the Disney Parks recipe that I changed is the amount of yeast in the dough. The original didn’t have nearly enough yeast, so I did tweak it just a bit.
In a bowl, combine 1/4 cup warm water and an entire packet of instant yeast and stir to dissolve. Allow that to sit for about 5 minutes.
While the yeast is sitting, in a stand mixer combine sugar, shortening, salt, heavy cream, egg, flour, and boiling water.
Then add the yeast mixture and with a dough hook attachment, mix the dough until it is just combined and smooth. Once the dough is smooth, allow it to rest for 30 minutes.
Next place the dough on a clean, floured surface and roll out to 1/4 inch thickness. Cut out the beignets using a Mickey shaped cookie cutter. If you don’t have a Mickey cookie cutter you can do 3 inch squares instead.
Place the beignets on a cookie sheet lined with parchment paper and cover with a towel. Leave the beignets in a warm area for 1 to 1 1/2 hours until the beignets have doubled in size.
Once the beignets are risen, you need to get the oil ready. In a deep pan on the stove or an electric skillet, heat 3 inches of vegetable oil over medium-high heat or to 350°. Place the beignets in the oil and allow them to cook about 2-3 minutes or until both sides are golden brown. You can cook 4-5 beignets at a time, just make sure you don’t overcrowd them.
Once the beignets are cooked, remove them with a tong and place them on a plate lined with paper towels so the excess oil can drain.
Once the oil is drained off the beignets but they’re still warm, put them into a gallon size ziploc bag filled with powdered sugar and gently shake them to coat them completely.
Remove from bag and enjoy immediately while they’re still warm!
COPYCAT MICKEY-SHAPED BEIGNETS RECIPE
Mickey-shaped Beignets
Equipment
- Stand mixer
- Mickey cookie cutter
- Rolling Pin
Ingredients
- 1 packet instant yeast
- 1/4 cup warm water
- 1/4 cup sugar
- 2 tbsp shortening
- 1/2 tsp salt
- 1/2 cup heavy cream
- 1 egg
- 4 cups flour
- 1/2 cup boiling water
- Vegetable oil, for frying
- Powdered sugar, for coating
Instructions
- In a small bowl, sprinkle the yeast packet over 1/4 cup warm water and stir to dissolve. Allow to sit for 5 minutes.
- In a stand mixer, combine the sugar, shortening, salt, heavy cream, egg, flour, and boiling water. Then add the yeast mixture and using a dough hook attachment, mix the dough on medium speed until the dough is just combined and smooth. Allow to rest for 30 minutes.
- On a floured surface, roll out the dough to 1/4 inch thickness and using a Mickey shaped cookie cutter cut out the beignets. Please the beignets on a parchment paper lined cookie sheet and cover with a towel. Allow them to rise in a warm area for 1 to 1 1/2 hours until doubled in size.
- Once they are risen, fill a large sauce pan with about 3 inches of vegetable oil so the beignets won’t touch the bottom and heat over medium to medium-high heat. Using tongs, carefully drop 3-4 beignets in the oil at a time and fry about 2-3 minutes flipping as soon as the first side is browned. Place them on a paper towel lined plate and alllow the excess oil to drain off of them.
- While the beignets are still warm, place them in a gallon sized ziploc bag filled with powdered sugar and gently shake them to evenly coat them. Enjoy immediately.

Now let’s be honest, no beignets are complete without a delicious, refreshing mint julep so let’s whip up a batch of those really quick!
Disneyland has changed the presentation of their mint juleps over the years. On my most recent trip I noticed they don’t have a bright green color anymore and they are served with a slice of lemon but for this recipe I went for an older version they had with a rich green color and maraschino cherries as garnish.
WHAT YOU’LL NEED FOR THE MINT JULEPS
These non-alcoholic mint juleps are so quick and easy to make. Here’s what you’ll need:
» Club soda
» Sugar
» Lime juice concentrate
» Frozen lemonade concentrate
» Pure mint extract
» Green food coloring
» Mint leaves
» Maraschino cherries
» Toothpicks
TO MAKE THE MINT JULEPS
In a sauce pan, combine the club soda and sugar and cook on medium heat until the sugar is dissolved.
Then add the lime juice and thawed lemonade concentrate (1/2 a tube) to the sauce pan and increase the heat to medium-high and cook until it begins to boil.
Once the mixture is boiling, remove from heat and add the pure mint extract. If you want it to be more minty, you could add a few more drops or if you want a subtle mint flavor, you could do 1/2 teaspoon instead of the full amount.
Also add the green food coloring. I made mine a little darker because it will get diluted by water when you serve so I wanted the green to still show up.
Transfer the mixture to a bowl or container and place in the fridge until it’s completely chilled.
To serve, you want a 3:1 ratio of water to syrup. I usually do 1 1/2 cups of water and add 1/2 cup of the flavored syrup mixture. To garnish, add a mint leaf and some maraschino cherries on a toothpick and enjoy!
COPYCAT MINT JULEP RECIPE
Disneyland Mint Juleps
Ingredients
- 3 cups club soda
- 1 cup sugar
- 3 tsp lime juice concentrate
- 6 ounces frozen lemonade concentrate, thawed
- 1 tsp pure mint extract
- Mint leaves
- Maraschino cherries
- Toothpicks
Instructions
- In a sauce pan, combine the club soda and sugar over medium heat, stirring occasionally, until the sugar is dissolved.
- Add the lime juice concentrate and lemonade concentrate and bring to a boil while stirring occasionally.
- Once it has reached a boil, remove from heat and add the pure mint extract and green food coloring and stir to incorporate.
- Transfer to a bowl or container and place in the fridge to cool completely.
- To serve, combine 1 1/2 cups of water and 1/2 cup mint julep mixture in a glass. Top with maraschino cherries on a toothpick and fresh mint.
