Ingredients
1packetinstant yeast
1/4cupwarm water
1/4cupsugar
2tbspshortening
1/2tspsalt
1/2cupheavy cream
1 egg
4cupsflour
1/2cupboiling water
Vegetable oil,for frying
Powdered sugar,for coating
Instructions
In a small bowl, sprinkle the yeast packet over 1/4 cup warm water and stir to dissolve. Allow to sit for 5 minutes.
In a stand mixer, combine the sugar, shortening, salt, heavy cream, egg, flour, and boiling water. Then add the yeast mixture and using a dough hook attachment, mix the dough on medium speed until the dough is just combined and smooth. Allow to rest for 30 minutes.
On a floured surface, roll out the dough to 1/4 inch thickness and using a Mickey shaped cookie cutter cut out the beignets. Please the beignets on a parchment paper lined cookie sheet and cover with a towel. Allow them to rise in a warm area for 1 to 1 1/2 hours until doubled in size.
Once they are risen, fill a large sauce pan with about 3 inches of vegetable oil so the beignets won’t touch the bottom and heat over medium to medium-high heat. Using tongs, carefully drop 3-4 beignets in the oil at a time and fry about 2-3 minutes flipping as soon as the first side is browned. Place them on a paper towel lined plate and alllow the excess oil to drain off of them.
While the beignets are still warm, place them in a gallon sized ziploc bag filled with powdered sugar and gently shake them to evenly coat them. Enjoy immediately.
