Ingredients
1 1/4 cupwarm water
1packetinstant yeast
5cupsall-purpose flour
1/2cupsugar
1 1/2teaspoonssalt
1tablespoonvegetable oil
1/2cupbaking soda
4cupswarm water
Kosher salt
Butter
Instructions
In a small bowl, dissolve yeast packet in 1 1/4 cup warm water and let it sit for 10 minutes.
In a large bowl, add the flour, sugar, and salt and mix until well combined.
Add the oil and yeast mixture to the dry ingredients and mix until a dough forms. If it’s too dry, add water 1 teaspoon at a time. If it’s too wet, add 1 teaspoon of flour at a time until you’ve reached the right consistency.
Put the dough on a clean, floured surface and knead for about 5 minutes until smooth.
Once the dough is smooth, place it in a large greased bowl and cover with a greased piece of plastic wrap. Allow the dough to rise on the counter for about an hour or until the dough has doubled in size.
Preheat the oven to 450° and line two cookie sheets with parchment paper.
In an 8x8 pan or large bowl, combine the baking soda in 4 cups of warm water and stir until dissolved. Set aside.
Remove the dough from the bowl and on a lightly floured surface roll into thin ropes. Don’t make them too thick or they won’t bake correctly. Shape the ropes into Mickey, a traditional pretzel shape, or whatever shape you’d like.
Once your pretzels are shaped, carefully pick them up with a spatula and dip them in the baking soda/water bath, then place on the cookie sheet and sprinkle with kosher salt.
Bake for about 8 minutes until the pretzels are browned. Remove from oven and brush with butter and top with additional kosher salt if you’d like.
Notes
• This recipe will make 6 large Mickey pretzels or about a dozen smaller pretzels.• Store the pretzels at room temperature in a loosely covered container so they don’t go soggy.• If the tops of your pretzels go a little soggy, put them on a cookie sheet and broil them for a minute or two until the tops are crisped and brush with butter and add salt if needed before eating.
