Ingredients
1/4cupunsalted butter(1 stick)
1 (10 oz)bagmini marshmallows
5-6cupsRice Krispies cereal
1tspvanilla
Pinch of salt
To assemble:
2 cupsmilk chocolate chips
Candy coated chocolate candies
Popsicle sticksoptional
Instructions
Line a cookie sheet with parchment paper and set aside.
In a large saucepan, melt the butter over medium heat.
Once the butter is melted, add the bag of marshmallows and using a rubber spatula, stir often until the marshmallows are completely melted down.
Add the vanilla and salt, stir to incorporate and remove from heat.
Add 5 cups of Rice Krispies to the butter/marshmallow mixture. Stir until well combined. If you like gooey Rice Krispie treats, stop here. If you want more cereal, you can add the last cup and stir until well incorporated.
Dump the Rice Krispie mixture onto the parchment lined cookie sheet. Wet your hands with water and press the Rice Krispies into the cookie sheet. (This prevents them from sticking to your hands- you may need to wet them multiple times.)
Allow the Rice Krispie treats to sit on the counter at room temperature for a few hours so they can set.
Once the Rice Krispies are set, line another cookie sheet with parchment paper.
Using a Mickey shaped cookie cutter, cut out your treats. The bottom of the treats will be more sticky so place them sticky side up on the second cookie sheet.
If you want to add popsicles sticks to your Rice Krispie treats, now is the time to add them but it’s totally optional. Slide them in so that they’re about halfway into each treat.
Allow the cut out treats to sit on the counter for about an hour.
Next, melt the chocolate chips in the microwave. Using a spoon, coat one side of each Rice Krispie treat in chocolate.
While the chocolate on the Rice Krispies is still wet, cover each treat with candy coated chocolate candies.
Once all the Rice Krispies are coated, take the remaining melted chocolate and put it into a sandwich bag. Snip off the corner and drizzle chocolate over each Mickey rice krispy treat.
Leave the treats to set on the counter for about an hour or until the chocolate is completely set. Enjoy!
Notes
• This should make between 12-15 Mickey Rice Krispies depending on how big your cookie cutter is.
